Crusted Pumpkin Wedges with Sour Cream or Cashew Cream

A hearty vegetarian meal.

Ingredients
- 1 butter nut squash or pumpkin
- 1/2 grated Parmesan cheese
- 3 tbsp of bread crumbs
- 6 tbsp chopped parsley
- 2 tbsp chopped thyme
- Grated Zest of 2 lemons
- 2 cloves of garlic crushed
- Salt
- 1/4 cup of olive oil
- 1/2 sour cream or cashew cream
Instructions
- Preheat oven 375 cut pumpkin and lay flat.
- Mix paremasan, herbs, bread crumbs and salt together. And brush squash with olive oil and sprinkle the dry mix over.
- Roast for 30 minute. Serve warm with sour cream on the side.
