Ingredients
  1. 1 butter nut squash or pumpkin
  2. 1/2 grated Parmesan cheese
  3. 3 tbsp of bread crumbs
  4. 6 tbsp chopped parsley
  5. 2 tbsp chopped thyme
  6. Grated Zest of 2 lemons
  7. 2 cloves of garlic crushed
  8. Salt
  9. 1/4 cup of olive oil
  10. 1/2 sour cream or cashew cream
Instructions
  1. Preheat oven 375 cut pumpkin and lay flat.
  2. Mix paremasan, herbs, bread crumbs and salt together. And brush squash with olive oil and sprinkle the dry mix over.
  3. Roast for 30 minute. Serve warm with sour cream on the side.
